Homemade Pierogies!

I made some homemade pierogies from some of our homegrown potatoes! For the dough I used 2 cups of flour, 2 eggs, a tsp of salt and 1/3 cup of lukewarm water. I mixed the dough and then let it sit for 10 minutes.
For the inside of the pierogies I made regular mashed potatoes and added some suateed onions and shredded cheddar cheese.
I made some up and then let them sit in the fridge to chill. Then I rolled out the dough and used a large cup to cut them out. Then I spooned some of the potatoes into the center and folded them over and used my fingers to press and seal them shut.
Then I boiled them and fried them in butter. I like to dip mine in ranch dressing!
For my first time making them they came out pretty good! The kids sure did like them! They are a labor of love though!

Excellent post! They look so good. Being Polish, my family made these all the time. It is surprising how many people have never had them.

I agree with Katlupe. The first time I told my mother that I had made pierogies for dinner, she said, "You made what?"
